Non allergenic adjuvants for very fine filtrations and clarifications
Fruit of the most advanced technological research, WANAX® Line puts at the oenologist’s disposal a limited range of very fine products, originated from raw materials which are not considered allergenic by the current regulations.
In consideration of the rising request for non allergenic products for musts and wines processing, Enologica Vason’s Research & Development Department is deeply committed in the selection of the best raw materials by using exclusive techniques: by assessing the colloids’ electric charge, for example, it is possible to study the interaction of the clarifying agent with the must or the wine.
This strong push towards scientific research, has led to a deeper knowledge of vegetal proteins’ world, and to the discovery of some raw materials which are absolutely inclined to and appropriate for the oenological use because:
· their reactivity,
· they do not cause overfining effects,
· they respect wine’s organoleptic content and colour,
· their precision in obtaining the desired results.
