COMPOSITION
Oenological tannin, obtained from Limousin oak wood using an exclusive water/alcohol solution extraction process.
CHARACTERISTICS
PREMIUM LlMOUSIN is tannin obtained from fine oak wood from the Limousin region of France. The original extraction process involves the slow extraction of the tannin contained in the oak heartwood using water and alcohol; this process allows the extraction of mostly polyphenol substances with non-aggressive organolectic characteristics similar to those extracted during the refinement stage in wooden casks.
Another important characteristic of the product is the presence of substances from the lignin, the hydrolysis and transformation of which contributes to the vanilla flavour characteristic of wines refined in wooden casks. '
PREMIUM LlMOUSIN helps to stabilize the colour fractions of red wines while improving the life of the product and its resistance to oxidation.
PREMIUM LlMOUSIN also imparts greater aromatic complexity and a fuller body to the wines treated.
The qualitative characteristics of PREMIUM LlMOUSIN are guaranteed by the Botanical Origin Certificate and by the analytic controls to which the product is subjected and which must satisfy all the parameters stipulated by Codex CEnologique International.
APPLICATIONS
PREMIUM LlM0USIN can be used in the treatment of red and white wines, vinegar and other distilled products.
In wines, PREMIUM LlMOUSIN can be used even in the first refinement phase of the product, particularly if this takes place in old wooden casks that are no longer able to release tannins; this will also ensure effective stabilization of the colour of the wine.
PREMIUM LIMOUSIN can also be used in the final assembly and treatment phases of white and red wines; in this case, it is recommended to use PREMIUM LlMOUSIN before final clarifying filtration.
it is nevertheless recommended to carry out tests using varying quantities of PREMiUM LlMOUSIN tannin in order to determine its organoleptic interaction with the product.

DIRECTiONS
In order to avoid tannin-protein precipitation, check the protein stability of the wine. Dissolve the necessary quantity of PREMIUM LIMOUSIN thoroughly in 10 parts of hot water and then add to the product to be treated; do not use metal Objects or water rich in calcium. It is recommended to use PREMIUM LlMOUSIN at least 10 days before the next filtration treatment.
DOSAGE
From 5 to 30 g/hL for red 'Nines; from 1 to 5 g/hL for white wines; from 10 to 40 g/hL for vinegar;
from 5 to 40 g/hL for distilled products.
