TI PREMlUM®
CATECHINIC TANNIN EXTRACTED FROM GREEN TEA, FOR OENOLOGICAL USE, READLY SOLUBLE.
COMPOSITION
TI PREMIUM is a granuiated tannin, for oenological use, obtained via a delicate process of extraction from the best oriental selections of green tea_ The picked leaves are treated with steam and immediately essicated in order to maintain the original characteristics of catechins and polyphenols unaltered_
TI PREMIUM® is a tannin with a high catechinic content and a composition very similar to that of grapes.
CHARACTERISTICS
TI PREMIUM® is the fruit of a careful and pluriennal selection of vegetal raw materials (R&D Enologica Vason), all of which are interesting for their procyanidic and catechinic composition. The composition of this product is remarkable for the presence of precious elements that are highly reactive to anthocians and to oxidative enzymes (Iaccases and polyphenoloxidases).
TI PREMIUM® gives the product a longer lifetime and resistance to oxidations, and it therefore indirectly involves less sulphur dioxide in ensuring the wine's stability. Tl PREMIUM® is highly reactive towards proteins.
Wines treated with TI PREllillUM® reveal softness, roundness, and more fresh aromas. Sensory interactions from other catechinic tannins not derived from grapes (eg: quebracho) are not encountered.
Via a particular technique of production called "instantaneization", TI PREMIUM® acquires the specific quality of being extremely soluble while preserving its organoleptic characteristics.
USE
The use of TI PREMIUM® in musts and young wines helps to prevent oxidative processes, and is particularly recommended for unhealthy grapes_
In the case of wines, it can be used either after fermentation or during fining: in particular,during red wine vinification, its use during maceration and drawing off permits the fixation of the anthocyanic fractions extracted from the grapes' skins.
TI PREMIUM is extremely interesting also in the treatment of white wines to favour proteic stabilization: multiple additions during fining allow one to use less bentonite, thus preserving the product's integrity_
it is interesting to use TI PREMIUM® in wines tending towards reduction, because of its reactivity towards mercaptans and sulphurs_
TI PREMIUM® is also recommended in the treatment of vinegars and distillates. When utilising TI PREMIUM@foilow the laws in force in the country of use. INSTRUCTIONS FOR USE
Dissolve carefully the necessary quantity of TI PREMIUM® in ten parts of water (best if demineralized, metal-free in any case), and add it to the mass. Do not use metallic objects or hard water.
It is advisable to use a few days before filtration. DOSAGE
From 5 to 20g/hL in vinification.
From 2 to 5g/hL during fininll of red wines; from 3 t08 G/hL in the elaboration of Rose; from 1 t05g/hL in the elaboration of white wines.
