Optimal patented grape & must heating without risk of caramelization. Manufactured in stainless steel, this exchanger will bring fresh grapes up from 20C to 80 or 90C for use in thermovinification products such as FLASH DETENTE or GULFSTREAM, or with your thermovinification project.

FLASH DETENTE 8-48 tph
FLASH DETENTE TECHNOLOGY: Our range of pre-fermentation processes on red wines is designed to give the means to elaborate colored and fruity wines by enhancing their aromatic potential and the typical aspect of each variety.
Our GULFSTREAM thermo-treatment improves the quality of wines when grapes are damaged and it also eliminates pyrazine. Then our “MPC” (Macération Pelliculaire à Chaud, or Hot-skin Contact Maceration), which is directly followed by a pressing, emphasizes the fruity side of red wines.
As for our FLASH DETENTE, which is directly followed by a direct pressing or a short maceration, it significantly increases the phenolic components of wines which are meant for blending or ageing. These multipurpose processes are complementary to traditional vinification. They can easily fit into our customers’ production sites. They will significantly improve the production’s potential of the winery without extension of tanks.
